The process begins with sourcing the highest quality fish from responsible fisheries. We ensure that every fishery meets and exceeds our rigorous standards for quality, food safety, and sustainability. Each fish and vendor undergoes thousands of tests before meeting qualifications.

A cut above.

The first cut into the fish is critical in maintaining its purity and quality. That’s why we only use whole fish—never pre-cut fillets from random facilities. Our fish is expertly cut in a ready-to-eat environment that meets sashimi-grade standards, ensuring maximum freshness and safety.

Slow cold smoking.

We employ time-honored cold-smoking techniques, perfected over more than a century. Using natural hardwood smoke, the fish is gently dried and smoked for over 17 hours below 80 degrees Fahrenheit. Master smokers adjust the process based on the unique characteristics of each batch, enhancing both flavor and nutrition.

Gentle freeze-drying for maximum nutrition.

To preserve nutrients at their peak, we use a freeze-drying process that subjects the fish to ultra-low temperatures (-30 to -50°F) under vacuum. Unlike heat-based methods like baking or extrusion, which degrade nutrients, freeze-drying locks in the fish’s natural goodness—just as fresh and nutrient-rich as when it came out of the water.
